About the Recipe
This chocolate cake is a foolproof 100% every time kind of cake. Follow the recipe to the letter and you will have a guaranteed light, fluffy, moist, and tasty chocolate cake.
Ingredients
2 cups / 326g plain flour
2 cups / 446g caster sugar
70g cocoa powder
2 tsp / 8g baking powder
1.5 tsp 9g baking soda
1 tsp salt
1 cup 260g full cream milk
110g vegetable oil
2 eggs
2 tsp vanilla extract or bean paste
1 tbsp fresh press coffee or shot of espresso
1 cup boiling water
Method
1. Add plain flour and cocoa powder into your mixing bowl, followed by the baking powder and soda then your caster sugar. Mix the dry ingredients together.
2. Add wet ingredients, milk, espresso, eggs, vegetable oil, boiling water and your choice of vanilla. Mix for 2 minutes on medium low, pause to scrape the mixing bowl down. Mix for a further 1 - 2 minutes and check there are no further dry ingredients in the bowl.
3. Either pour into cake a lined cake tin/s or patty pans. In the oven at 160°c fan forced on the middle rack for 20 min, skewer to ensure they are cooked all the way though.
