Ingredients

Sweet Potato & Beef Base

Sweet potatoes: 2 medium, diced

Beef strips: 500g, lean

Garlic: 4 cloves, minced

Red onion: 2 large, finely sliced

Roma tomatoes: 4 medium, diced

Burrito seasoning: 60g cayenne pepper, cumin,

Black beans: 1 can (400g), rinsed and drained

Sweet corn: 1 can (400g), salt-reduced, drained

Red capsicum: 1 medium, diced

Jalapeño: 1 fresh, finely sliced

Premium Toppings & Garnish

Avocado: 1 fresh, sliced or mashed

Feta cheese: ½ cup, crumbled

Greek yoghurt: 1 dollop per bowl (as a healthy sour cream alternative)

Lime: 1 fresh, cut into wedges

Fresh parsley: ½ cup, roughly chopped

Preparation

Step-by-Step Instructions

  1. Roast the Sweet Potatoes: Preheat your oven to 200°C. Split the sweet potatoes lengthways and lay them flat-side down on a baking tray lined with baking paper. Roast for approximately 1 hour.

    • Pro-Tip: Baking times vary by size. Press the thickest part of the potato; if it is soft to the touch, they are perfectly cooked. Once done, set aside until they are cool enough to handle.

  2. Prep the Fresh Toppings: While the potatoes roast, prepare your fresh ingredients. Open and thoroughly rinse the black beans and salt-reduced corn. Finely chop the green capsicum, jalapeños, Roma tomatoes, red onion, garlic, and fresh parsley. Slice the avocado and cut the lime into wedges.

  3. Set Up Your Burrito Bowl Station: Place each prepared topping into separate ramekins or small bowls. This creates a fun, customizable "build-your-own" burrito bowl station so everyone can add their favorite ingredients.

  4. Cook the Seasoned Beef: Place the beef strips, minced garlic, 1 cup of the chopped tomatoes, 1 cup of the red onion, and your burrito seasonings into a frying pan over medium heat. Sauté gently until the meat reaches an internal temperature of 54°C (129°F).

    • Note: Keep the heat strictly on medium. Avoiding high-heat browning preserves the nutrients and clean benefits of the lean beef.

  5. Assemble Your Healthy Burrito Bowl: Place the tender roasted sweet potato into the base of a large bowl. Layer with approximately 1 cup of the seasoned beef mixture, then load it up with your choice of fresh toppings, a sprinkle of crumbly feta, and a dollop of Greek yoghurt.

Meal Prep & Storage Tips

While this healthy dinner recipe takes just over an hour due to the roasting time, it is an incredibly simple meal that is perfect for weekly meal prep.

  • To Store: Keep the cooked sweet potato and beef together in an airtight container in the fridge for up to 4 days. Store your fresh toppings in a separate container.

  • To Reheat: Simply microwave the potato and beef base until piping hot, then layer your cold, fresh toppings over the top.

Enjoy your wellness journey!

Hi, my name is

Chris

Chris here from Sliver and Bite, I have been creating desserts for 4 years and recently started creating real time cooking tutorials on social media. I have always prided myself on creating authentic food with real ingredients. When learning to cook I found a gap in the market for real time cooking tutorials. I slow the process down so the viewer is able to cook along.
