180 Cocoa powder
1 tbsp 20g vanilla bean extract
6 tbsp 160g raw honey
3g salt (optional)
Preparation
Prep the veggie base: Wash and cut the cauliflower into palm-sized florets.

Cool slightly: Place the cooked cauliflower into a high-speed blender and allow it to cool for up to 6 minutes. The cauliflower should still be quite warm to properly melt and combine the ingredients.
Pre-blend: Whiz the cauliflower for 5 seconds just to break up the florets.
Add the remaining ingredients: Add the honey, vanilla extract, and cocoa powder. Whiz immediately so the cocoa powder blends smoothly without clumping.
Adjust sweetness: Taste your healthy chocolate creation. If you prefer a sweeter dessert without adding extra calories, stir in a bit of monk fruit sweetener.
Chill and set: Pour the mixture into a sealable vessel. Leave it on the bench for 15 minutes to cool, then transfer it to the fridge for at least 3 hours to set completely.
Garnish and serve: Serve chilled with fresh fruit and a sprinkle of grated dark chocolate.
