About the Recipe

The use of almond flour instead of regular flour provides protein and fibre which increases the benefits ten-fold especially because it is the majority of the ingredient mass.  Plain flour is simply put… trash.

The differences between almond and plain flour are polarizing as you can see in the benefits table below.

Honey is a more natural alternative than sugar and the addition of clove powder which fights inflammation amongst many other advantages.

Almond flour

Gluten free & packed with protein and fibre.

Low GI which decreases spikes in blood sugar.

Contain monounsaturated fats which is great for heart health & protects cells.

Olive oil

High levels of antioxidants that protect cells.

Anit-inflammatory properties.

Lowers bad cholesterol and actively protecting and improving good cholesterol.

Clove powder

Anit-inflammatory properties.

Rich in manganese, aids bone health & metabolism.

Fights free radicals.

Aids digestion.

Cinnamon powder

Lowers blood sugar levels by preventing glucose spikes.

High levels of antioxidants fight free radicals & reduces inflammation.

Improves insulin sensitivity.

Supports heart health by lowering bad cholesterol and triglyceride fat.

Honey

High levels of antioxidants that fight cell damage.

Lower GI.

NOTE: many properties are lost when using for cooking however the benefits are greater that using processed sugars.

Eggs

Supports muscle strength.

Aids weight management due to high protein. 1 large egg contains approx. 7g protein.

Eye protection, reducing risk of cataracts.

Vitamins B12, D, A, selenium & iron.


Ingredients

3 cups 329g almond flour

3 345g bananas

3 160g eggs

1 tsp 7g baking soda

1 tsp 5g baking powder

1 tsp 3g cinnamon

1/4 salt

1/4 clove powder

1/4 cup 110g honey

1/3 cup olive oil

2 tsp vanilla extract

Preparation

  1. Peel bananas and mash so they are able to mix evenly when added.


  1. Add wet ingredients to the mashed bananas, honey, vanilla, olive oil and eggs.


  1. Mix well


  1. Add and mix the first of the dry ingredients, baking soda & powder, salt, cinnamon and clove powders.


  1. Add half of the almond flour and mix gently, followed by the rest of the almond flour folding the mixture to ensure the bread doesn't deflate when taken out of the oven.


  1. Pour the mixture into a lined 9x5 inch bread tin.


  1. Place onto the middle rack of a pre-heated oven at 175c 375f oven for 50 minutes.


  1. Check the reediness at the 45-minute mark with a skewer, if the skewer comes out clean remove from the oven.


  1. Allow to cool for 10 min in the tin and remove to avoid from sweating.
