15-minute Pho

INGREDIENTS
1 liter broth
2 tsp Chinese five spice
3 tsp fish sauce
TOPPINGS
1 cup rice noodles
1/2 onion
4 sprigs fresh coriander
2 sprigs fresh mint
1 cup bean shoots
500g sirloin steak
1 sprig spring onion
1 fresh chili
Whilst this isnt a designer meal by any means sometimes you just need to consume a meal to keep moving. This is a no fuss yet satisfying meal to bridge the gap to keep moving.

METHOD
1. Pour store bought stock into a pot and bring to a boil.
NOTE: place pre-soaked rice noodles into broth to allow to separate. If using dehydrated rice noodles soak as per package instructions.
2. Thinly slice brown onion and soak in cold / ice water to reduce the sharpness.
3. Chop chili and green / spring onion and wedges of lemon ready to garnish.
NOTE: wash bean shoots to rid of any bacteria and loose husks.
3.1 slice the white part of the spring / green onion and throw into the broth.
4. Thinly slice lean meat (when I say thin, I mean THIN.
5. Once the broth and noodles have been boiling for 10 to 15 min add thinly sliced meat to the broth to slightly cook and then add to a large bowl.
6. Top with your toppings and a squeeze of lemon.
