About the Recipe
Unmistakably American this 100-year tradition is synonymous with game days, late nights out or a casual street vendor meal. But now you can create a healthier version in your own home.
Ingredients
BOWL INGREDIENTS
500g beef
Red capsicum
Green capsicum
2 onions
3 cloves garlic
1 tbsp ginger
1 chilli (some reserved for garnish)
Chives (optional garnish)
Greek yogurt
Firm cheese
SEASONING
Garlic powder 1 tbsp 10g
Onion powder 1 tbsp 5g
Chilli powder 1 tsp 5g
Smoked paprika 1 tbsp 7g
Salt 1 tsp 5g
Pepper 1 tsp 2g
Method
1. Cut a sweet potato lengthways down the centre and place facedown on some baking paper.
2. Place in a 200c oven until soft, could take up to 90 minutes
3. Dice the green and red capsicum along with the onion, these will be quite a large cut to keep it faithful to the original
4. Zest fresh garlic and ginger
5. Finley chop optional chilli for a little heat reserving some for the garnish
6. Combine the seasonings in a bowl for the cook

7. Add some vegetable oil to a frying pan and add the onion, cook until they start to caramelise cook for approx. 10 minutes
8. Add the capsicums and chilli along with 1 to 2 tbsp of the seasoning mix and slightly cook, you want to leave a little crunch for texture, cook for approx. 5 minutes
9. Place in a bowl off to the side ready to assemble the bowl
10. Using the same frypan add some additional vegetable oil followed by the beef and cook on a medium heat for approx. 5 to 8 minutes adding 2 tbsp of the seasoning.
NOTE: for a quicker meal purchase precut
ASSEMBLE THE BOWL
1. Place one of the roasted half sweet potatoes in a bowl
2. Scoop approximately a cup of the onion and capsicum over the potato
3. Tong some of the beef followed by a dollop of Greek yoghurt
4. Grate some cheese over the contents of the bowl, I am using Manchego
5. Garnish with some chives and chopped chilli
