About the Recipe
Hoisin sauce, translates to "seafood sauce" in Cantonese, is a thick, dark, sweet and savory sauce popular in Chinese and Vietnamese cuisine. With it's complex flavor profile, combining sweet, salty, and umami notes it is commonly used as a glaze, marinade, dipping sauce, or as an ingredient in stir-fries.
Ingredients
20g 2 cloves garlic
15g 1 tbsp sesame oil
25g fresh ginger
70g 2 sprigs spring onions
55g 4 tbsp light soy sauce
65g 5 tbsp pure maple syrup
50g 2 tbsp molasses
25g 1 tbsp peanut butter
15g 1 ½ Gochujang
15g 1 ½ miso paste
4g 2 tsp rice wine vinegar
1/4 tsp Chinese Five Spice
1/4 tsp cornstarch
Method
Prep
Finley grate / zest the ginger and garlic.
Finley chop spring onions running over the onions a few times with a knife to mince.
Measure out the rest of the ingredients, you can measure all ingredients into one bowl to add all at once
Cook
Place sesame oil into a medium pot on medium to low heat.
1.1 add ginger and garlic and stir to lightly brown.
1.2 add chopped spring onion and sir until translucent.
Add and stir in the rest of the ingredients, simmer for approx. 15 minutes.
If you would like a thicker consistency for dipping combine the corn flour with a few teaspoons of water mix and add to the pot and stir until it thickens.
