About the Recipe

A favorite amongst those in the know, this Drake’s Coffee Cake imitation is as close to the real thing as you can get. Soft light and fluffy with little nuggets of crumble on top. Just like it is explained in the show it’s “the plain cake with the sweet brown crumbs on the top”. Even better you probably have all the ingredients you need to create them now.

Ingredients

COFFEE CAKE INGREDIENTS

1.5 cups 150g flour

1/4 tsp baking soda

1/4 salt

1/2 tsp baking powder

1 cup 220g sugar

X2 eggs

1/2 cup 150g softened butter

3 tsp 15g vanilla

3 tsp 15g vegetable oil

3/4 cup 180g sour cream


Basic Crumble

1/2 cup 80g plain flour

1/3 cup caster sugar

6 tbsp 132g butter

1/2 tsp 3g cinnamon

Method

COFFEE CAKE METHOD

1. Place the room temperature butter in a large mixing bowl followed by the caster sugar.

2. On slow combine the mixture with a hand mixer until the butter is combined with the sugar.

Note: it’s ok if the mixture isn’t whipped

3. Add the room temperature eggs and combine.

4. While you are mixing you can add the coffee, vanilla extract and vegetable oil combine these last ingredients for 30 seconds or so.

5. Sift in the plain flour, baking soda, baking powder and salt.

6. With a mixing spoon fold the ingredients together.

7. While there is still a little visible flour add the room temperature sour cream and continue mixing until fully combined.


CRUMBLE METHOD

1. In a medium bowl have your room temperature butter ready to receive the caster sugar, flour and cinnamon.

2. With a fork combine the ingredients ensuring to fully combine but not enough to break the crumble into too smaller chunks.

3. Place in the refrigerator until you require it otherwise it will be too soft to scoop

175°c for 20 min
