Chipotle Sauce
versatile spicy condiment

Versatile sauce, dip, drizzle or dressing. Made with the hero ingredient chipotle in adobe sauce and mellowed out with fresh herbs and yoghurt. This sauce will make anything it touches sing, burgers, vegetables, pasta, tacos or as a marinade, just to name a few.

INGREDIENTS
2 tbsp 20g olive oil
2 tbsp 40g Greek yogurt
1/2 cup 115 mayonnaise
2 tbsps 20g lime juice
2 tbsps 40g honey
1 tsp 3g cumin
1 tsp 3g smoked paprika
2 cloves 10g garlic
100g Chipotles in adobo sauce
15g coriander
Pepper & salt to taste
The hero of this sauce is the chipotle in adobo which is easily purchased from a mainstream supermarket. You can certainly create your own as its dried jalapeños.

METHOD
1. In a blender or food processor add mayonnaise and Greek yoghurt.
2. Followed by fresh squeezed lime juice, olive oil, honey, whole cloves of garlic, whole jalapeño, cumin and smoked paprika.
3. Start with a few short bursts to break up the garlic and jalapeño.
4. Now blend on medium speed for 30 seconds then for 1 minute to combine and emulsify the sauce.
5. Add the coriander including the stems and blend for 10 seconds.
Taste the chipotle sauce to adjust the taste to your liking.
